Tom Yum-Mushroom Soup

INGREDIENTS

• 1-2 teaspoon Olive Oil
• 1 teaspoon Soy Sauce
• 250 gm Carrot
• Button Mushroom
• 2 teaspoon Lemon Juice
• 2-3 Garlic Cloves
• Coriander Leaves
• ½ cup chopped Onions
• Chopped French Beans
• 1 teaspoon minced Ginger
• Mint Leaves
• Minced Chillies
• Salt as per taste

INSTRUCTIONS

Heat some Olive Oil in a pan.

Once heated add chopped Onions to it. Stir Well!

Now, add chopped Garlic, Carrot and French Beans to it. Gently mix them well!

Next, add chopped Mushrooms, Ginger, Green Chillies, Salt, Lemon juice and Soy Sauce! Stir well!

Once done, add some water and let it cook for 10 minutes.

Sever while it's hot!

Paneer Modak

INGREDIENTS

• Paneer
• Sugar
• Condensed Milk
• Saffron
• Cardamom powder

INSTRUCTIONS

Add paneer, sugar, condensed milk, saffron strands in a saucepan and combine.

Heat the pan on low flame and keep cooking till it combines to form a dough.

Add cardamom powder and mix well.

Remove from flame.

Give your dough tear drop modak shapes or use modak moulds to give it the desired shape.

Serve it hot.

Mango Coconut Burfi

INGREDIENTS

• 1½ cups Coconut, grated
• 1 Mango, pulp
• 1/2 cup Milk
• 1/3 cup Sugar
• 1/4 teaspoon Cardamom Powder (Elaichi)
• 5-6 Pistachios (Pista), chopped

INSTRUCTIONS

Take a tray and grease it with ghee or butter. Keep it aside.

Next, heat a pan over medium flame and add coconut to it.

Stir continuously until it becomes dry, lightly brown and fragrant.

Now, add milk, sugar and mango pulp. Mix it and keep stirring till it dries out and becomes thick (For around 18-20 minutes).

Turn off the flame, add cardamom powder and mix well.

Transfer the mixture to the greased tray and spread it evenly.

Sprinkle a few chopped pistachios on the top.

Let it cool. Once it cools down and sets, cut it into pieces.

4.Nigeria, the world’s largest rice importer, is likely to import 15% less this year due to higher import duties, while China’s domestic production will be high enough to permit a 35% fall in its imports, the grains council said. 5.Stocks of rice in India, Vietnam, Pakistan, Thailand and the U.S. will rise 3.8% to 38.2 million metric tons in the aggregate 2012-13 marketing year
